Maintaining and caring for draught systems 

We want your customers to enjoy perfect quality Peroni Nastro Azzurro and Pilsner Urquell. Following a few simple rules will ensure that you deliver the optimal
drinking experience to your customers.

 

Storing and caring for your kegs 

Store kegs in a temperature controlled cellar/storeroom or store in a keg cooling cabinet.

Keep the kegs at the ideal storage temperature of 12°C/ 52°F.

For kegs to reach a stable cool temperature, store the kegs for 48 hours before opening.

To ensure a quality taste, once broached sell the contents of the keg within 5 days.

Stick to the FIFO rule! FIRST IN FIRST OUT!

Make sure the keg coupler is clean by cleaning with water before attaching a new keg. A dirty keg coupler is a primary source of infection within the dispense system.

Keep the distance between the keg and the tap as short as possible - ensure beer lines are straight and secure.

Never stack your kegs, especially when in use.

Handle kegs with care.

Chemically clean the beer lines at least once a week.

Connecting kegs to the Draught Installation and replacing empty kegs 

 

• To attach the keg to the keg coupler it is necessary to rotate the keg coupler on the keg
   spear, when it starts to engage (90 degrees in a clockwise direction) keeping the
   handle in a raised position
• It is not necessary to tighten the keg coupler to the top of the keg spear, as it will hold
  firm
• Once connected, lower the handle in order to effect the opening of the beer valve

To replace the empty keg:
Raise the keg coupler handle
Rotate the keg coupler 90 degrees in an anti-clockwise direction

Important Information
If the keg coupler does not easily disengage from the top of the keg spear, you must never attempt to force it or unscrew it. Always seek technical assistance: CONTACT US ON 0845 652 0065.
High gas pressures will remain in empty and full kegs, this pressure depends on the working conditions of the installation, and can reach up to 3 atmospheres. If improper instruments are used to attempt to disengage the keg coupler, you risk unscrewing the keg spear from the keg itself.

THE EXTREMELY HIGH PRESSURE WITHIN THE KEG COULD CAUSE A VIOLENT RELEASE OF THE KEG SPEAR.

Cleaning and Hygiene recommendations 

Ensure the tower is wiped down daily after closing, using a damp cloth.
• Make sure the drip tray is emptied, washed & dried daily
• Clean the beer tap daily as micro organisms can develop
• Always ensure the fount light is switched on each day for the highest level of visibility
• Keep obstructions away from the cooler grilles
• Clean the beer lines every 7 days as a minimum
• Clean the keg coupler each time the keg is changed
• Clean dust from the cooler grille using a small brush

Line Cleaning

A regular cleaning programme is essential for the presentation of a great pint.
Complete dispense system – clean every seven days as follows:
Flush out all traces of beer with cold water.

Add recommended amount of approved detergent to fresh water and pull through until system is charged with the solution.

Leave to soak for 20 mins, opening the tap at least once to improve the effectiveness of the cleaning process.

Disconnect the cleaning solution and connect to fresh water supply.

Flush out all traces of solution with cold water (min. 5 litres/1 gallon).

Clean the keg coupler with hot water and re-tap to keg (bleed fob detector if fitted).

By cleaning your Peroni Nastro Azzurro and Pilsner Urquell lines regularly you will  protect flavours support quality and hopefully an increased rate of sale.

Glassware care 

To enjoy Peroni Nastro Azzurro and Pilsner Urquell at their best, they should be served in the unique branded glassware supplied. Ineffective glass cleaning can lead to head collapse, tainted taste, odours, lack of lacing and poor gas release. This will lead to customer dissatisfaction.

Glass Cleaning

Wash and rinse new glassware thoroughly before use (use recommended glass washing detergent solution).

Washed glasses should be allowed to dry bottom up on the matting.

Regularly remove rinse aid build up from glasses and glass washing equipment using the appropriate solution.

Glasses should: be dry & cool, have no taste or odour, have smooth, non-tacky feel, be free from spots streaks or deposits.

Symptoms of a dirty glass: thin or no head, poor lacing, off flavour, clusters of tiny gas bubbles inside the glass.

Proper washing helps ensure that you serve a great pint. Only wash glassware in a glass washing machine. Ensure the glass washing machine is cleaned at least once a week to remove bacteria.
